Where Does Fake Crabmeat Come From?

New Jersey.  LM Foods is the only imitation-crab (a.k.a. surimi) manufacturer on the East Coast.  Each year seven US plants produce about 75 million pounds of surimi - minced processed fish - rivaling the real Alaskan shellfish harvest.  The US represents 7% of the global market, and Oregon State University surimi expert Jae Park puts worldwide sales at $6.5 billion.  LM, a spinoff of LG Corp, the Korean conglomerate known for cellphones, is owned and managed by two LG veterans.  Recipes are tightly guarded.
